The difference is in the Ginger snaps and raisins which go in the Rheinische Sauerbraten but not in the southern version. Sauerbraten recipes are regionally different in Germany, there is Sauerbraten, typically made in the south and southeastern corner of Germany and then there is the Rheinische Sauerbraten. Folks, I grew up in Germany and have cooked it in Germany and in the US. In reading all the comments there are way too much comments about the “real German” Sauerbraten recipe. I looked this recipe up to see whether I can learn something to add to my way of making Sauerbraten. I am making Sauerbraten every few months. Slice the roast, pour some sauce over slices on platter and pass remaining sauce separately.Return the sauce to the pan, adjust seasoning and allow to simmer over low heat until ready to serve. Strain the sauce through a fine sieve, pressing down hard with wooden spoon to force as much of the vegetables and crumbs through as possible.Depending upon the amount of liquid, you may need to add additional cookie crumbs. 10 minutes, allowing the cookie crumbs to dissolve completely and thicken the sauce to the desired consistency. Combine the liquid and the gingersnap crumbs in a saucepan and cook over moderate heat, stirring frequently for approx. If additional liquid is needed, add some of the reserved marinade. You will need at least 2 and ½ cups for the sauce. Pour the liquid left in the pot into a large measuring cup and skim fat from surface.Transfer the roast to a heated platter and cover with foil to keep warm while sauce is made.Alternatively, bake in 350 degree oven for 2 hours. Return the meat to the pot, cover tightly, and simmer over low heat for 2 hours, or until the meat shows no resistance when pierced with the tip of a sharp knife. Pour in 2 cups of the reserved marinade and ½ cup of water and bring to boil over high heat. Sprinkle 2 Tablespoons of flour over the vegetables and cook, stirring constantly, 2 to 3 minutes longer or until the flour begins to color. Cook over moderate heat until soft and light brown (5 to 8 minutes). For roasting, add the onions, carrots, and celery to the same pan you cooked the meat in.Add the meat and brown on all sides, turning frequently, so that it browns evenly without burning. In heavy, 5-quart dutch oven, heat the butter until bubbling stops.Strain the marinade through a fine sieve and reserve the liquid. Remove meat from marinade and pat completely dry with paper towels.Cover tightly with foil or plastic wrap and refrigerate for 2 to 3 days, turning the meat in the marinade at least twice each day. The marinade should be at least halfway up the sides of the roast. Place the beef in a deep, non-reactive (glass or ceramic) bowl or pot just large enough to hold it.Remove from heat and allow to cool to room temperature. Combine all marinade ingredients, except the roast itself, in 2 to 3 quart saucepan.

But the government is too busy culture warring and bungling the virus response to do anything for them, if it even cares.Īll this is taking place before the monsoon season, which may not only bring a second wave of migrants but also add further infrastructure damage, building on top of the devastating climate and environmental emergencies of the past few years, from floods to dried-up food and water supplies to droughts. They need homes, support, treatment, guided reintegration. People are lost, more so than ever before. Many of these workers are illiterate and possess no other education or “skills” translatable to other fields, valuable as their work actually is to the families they work for and the general running of the economy. The vast loss is indefinite, undocumented, and devastating. These are no temporary furloughs or structured processes for leave. When India finally opens back up, the innumerable people who lost their jobs will have no guaranteed reentry. When the Israeli Hostages Came Home, His Son Didn’t What Will Gaza Look Like One Year From Now? The clashes and loss of life here may not be anywhere near as brutal as the sheer inhumanity of Partition, but the scale of mass death of some of India’s most spurned people is likely to have similarly lasting repercussions. So many of these people are not going to make it home, whether they are killed by outside forces or die of starvation. Some have been killed along the way, struck by cars or buses or trains. Some migrants have protested this violence, only to face more crackdowns. Orders to help quarantine the migrants are falling flat it’s already impossible for many of India’s poor to socially distance, yet police are brutalizing violators for not adhering to rules in a situation they were forced into, by beating them and spraying them with disinfectant (part of a general trend of police abuse of power during the pandemic). And as they’re traveling, they’re being neglected and mistreated. Wrenching photos abound of them walking across desolate spaces, waiting in crowds for trains, venturing home while suffering and hungry. One of these is the nation’s massive informal workforce: the domestic workers, caretakers, door-to-door sellers, street entertainers, fruit stand owners, and many more who make up a vast, unincorporated sector of the Indian economy: more than 90 percent of its total workforce, totaling 450 million people, most of whom make a pittance in wages and earn no benefits even as they contribute to the bustling commerce and livelihood of their communities.Ībandoned by the employers whose livelihoods they’d kept afloat, with no financial cushion or emergency housing access, these new migrants are now adrift. Much like in other countries, COVID-19’s effect on India has been in part to starkly lay bare the inequities and injustices that make it the second-most unequal society in the world. This crisis is one of the deadliest consequences of the coronavirus pandemic’s impact on the country, and likely a portent not only for India but perhaps the rest of the world. And if it’s true, as some are noting, that the current migration crisis in India is its biggest and worst since the Partition, it deserves due attention and action. So, comparisons to this historic tragedy are not to be made lightly. Prior to that, Bill & Nikoletta owned Skip's on sixth and market and ran the banquet facility at the Canterbury Hotel.īill & Nikoletta fed and employed many Greek immigrants who came to San Francisco seeking job opportunities- many of which moved on to successes of their own. The original Pinecrest (named after a busy diner in Bayshore, Long Isl, NY, where Bill once worked) was located on Powell & Sutter. Once established, they brought their spouses and children to America.Īfter living through a winter in New York and obsessed with the notion of living where his father once lived, Bill moved his family to San Francisco where he worked in multiple restaurants until landing at the corner of Geary and Mason. After learning that his father once lived in San Francisco in the late 1800's (while owning, "The Bucket of Blood", a bar in Jack London Square named after a famous fight involving Jack London) the siblings discovered that they were eligible for American citizenship. On their long and difficult journey, they worked in restaurants in Montreal and eventually escaped the cold to Vancouver, where Bill worked his way to the ownership of Gus' Coffee Shop, in the Gastown district. Having been left orphaned after WWII, Bill and his siblings dreamed of moving to America and leaving their bad memories behind. The Pinecrest Diner was founded in 1969 by Vasilios (Bill) & Nikoletta Foundas, both immigrants of Greece. Established in 1969, the Pinecrest Diner is often referred to as a San Francisco institution, as it is the oldest standing, 24-hour diner in Union Square. This is a place that definately has the feel of a neighborhood place. As it turns out their menu shows a Red and a White Zin so I guess this was an issue of waitstaff not knowing their inventory. My husband enjoyed two local beers and I ordered a glass of Zin but was told they only had white Zin so I ordered a Pinot Noir instead. Mac and Cheese was uninspired and peanut slaw (which our waitress said is the only slaw she eats) was heavy on vinegar with raw peanuts added. Pulled pork had a very sweet jarred variety sauce. Mashed potatoes had burned clumps throughout from obviously being scorched sitting in bainmarie. Chicken skin looked crisp but was rubbery. I opted for the roasted half chicken with mashed potatoes and mixed veg. My husband And I started by sharing a Caesar salad. We were taken to the dining room and given a booth under a drafty air conditioner. The game was on behind the bar which was full of people. Upon entering we were greeted warmly by waitstaff in football jerseys. After a day spent on a long country drive we swung off the Taconic to catch dinner. I have been wanting to check this place out for awhile now. |
